Bite-size Banana Blueberry Pancakes
These little bite-size pancakes are a staple breakfast for the Mini in our household. They are super simple and quick to make, and any leftovers make EPIC lunchbox snacks for later. Itβs a win-win ππ»
Serves 2-3 little mouths
Ingredients
1 small banana
1/3 cup whole milk
1 egg, lightly beaten
1/4 tsp vanilla essence
1/3 cup wholemeal plain flour
1/4 tsp baking powder
1 Tbs quick oats
Approx 1/2 cup frozen blueberries
Small drizzle olive oil, to cook
Method
Mash the banana and place into a small mixing bowl. Add the milk, egg and vanilla and mix to combine.
Add the wholemeal flour, baking powder and quick oats, and continue to mix until you have a reasonably smooth batter.
Preheat a large frying pan over low-moderate heat and prime with a small drizzle or spray of olive oil. Place tablespoons of the batter onto the hot frying pan. Working quickly, top each pancake with approx 3 frozen blueberries. Allow to cook for 1-2 minutes, or until the underside is golden brown. Flip each pancake so that the blueberries are panside down, and cook for a further 1-2 minutes or until cooked through and golden on both sides. Repeat with remaining batter.
Allow to cool slightly before serving (the blueberries will be piping hot coming off the hot pan!). We love them as is, or served with a dollop of Greek yoghurt and a couple of extra berries ;)
