Date & Apricot Energy Balls

These dead-easy little energy balls are a super convenient snack to keep on hand or whip up in just a few moments. They are also a great family-friendly (and super tasty) alternative for Christmas treat gifting. There are plenty of opportunities for little hands to get involved, from counting dates and tipping ingredients into the bowl, through to rolling the balls and dousing them in coconut. These are bound to become a family favourite snack (and maybe even a favourite family activity)!

Makes 16 small energy balls

Ingredients

8-10 medjool dates

75g natural almonds

50g dried apricots

1/4 cup cacao or cocoa powder

1/4 cup desiccated coconut, for rolling

Method

  1. Place all the ingredients (except desiccated coconut) in the bowl of a food processor, and process for 1-2 minutes until the mixture is fairly smooth. It may still be a little sticky.

  2. Place the desiccated coconut into a small bowl. With damp hands, roll heaped teaspoons of the date mixture into small balls, then dunk/roll in the coconut until evenly coated. Press lightly to ensure the coconut sticks. Repeat until all the mixture is used.

  3. Place in the fridge for at least 30 minutes to firm slightly… or skip this step entirely and eat them as soon as they are rolled ;)
